Teryiaki Salmon
Serves: 4
Ingredients:
4 wild caught salmon fillets
250g green beans, trimmed
250g bunch of broccolini
2 carrots, peeled and chopped
1 T olive oil
1/2 tsp salt
1/4 tsp black pepper
2 spring onions, thinly sliced (garnish)
1/2 tsp sesame seeds (garnish)
Teriyaki sauce:
2 T tamari or coconut aminos
1 T honey or maple syrup
2 T water
1/2 tsp ground ginger
1/4 tsp garlic powder or 2 garlic cloves, minced
Method:
1. Preheat oven to 200 °C and cover a baking tray with baking paper.
2. Prepare teriyaki sauce in a small bowl mix ingredients and set aside.
3. Place salmon, green beans, broccolini and carrots in a single layer on the baking sheet.
4. Cover salmon with teriyaki sauce and drizzle olive oil over green beans, broccolini and carrots, seasoning with salt and pepper.
5. Cook until the salmon flakes easily with a fork, about 16-18 minutes.
6. Garnish with spring onions and sesame seeds.

Pumpkin Chicken Curry
Serves: 4
Ingredients:
500g chicken breast
1/2 cup diced onion
1 cup coconut milk
1/2 cup chicken or vegetable stock
1 cup pumpkin puree
3-5 T curry paste or powder
2 cups snap peas, chopped
1/4 cup shallots for garnish
Method:
Add chicken and salt to a pan with a little olive oil and brown over medium heat.
Remove chicken from heat and set aside. Add diced onion to the same pan and saute until translucent.
Add coconut milk, stock, pumpkin and curry paste and stir to combine with the onions.
Cook until the mixture thickens up a bit and liquid is nearly gone.
Dice cooked chicken, and add back to pan with the chopped snap peas and mix it all together.
Cook for 1-2 minutes, or until warm.
Top with shallots to serve.

Banana choc chip muffins
Serves: 12
ingredients:
400g of nut butter (I use ABC spread)
8 bananas
dark chocolate chips (sugar free if possible)
1/2 tsp nutmeg
1/2 tsp cinnamon
Method:
1. Preheat oven to 180°C.
2. Mash bananas with a fork in a bowl.
3. Add nut butter, cinnamon, chocolate chips and nutmeg and mix until combined.
4. Spoon batter into muffin tray.
5. Bake for 20 minutes.
6. Let the muffins cool and enjoy!!
